This year we have teamed up with Gooralie Free Range Pork to offer you the finest 100% Australian ham for your Christmas table!
Our house gammons are cured in the traditional Aussie way for 2 weeks in our newly formulated apera Christmas brine with a twist of local ale and some foraged herbs going into the mix. They are then slow-cooked and glazed with house marmalade, cloves and a dash of festive juniper berries and finished in our wood-fired oven. They are all meat, no bone, unsmoked natural style hams, just slice and serve! Available by the kilo.
The boneless gammon ham is $26 per kilo
We also have traditional bone in leg hams, glazed and wood-fired in the same fashion. Available in half and whole hams. A whole ham is approx. 8kg’s and will feed up to 14 people with left-overs!
The bone in leg hams are $32 per kilo.
We’ve also added Porchetta to our take home Christmas offering! They are slow roasted and stuffed with garlic, sage, cider and fennel, juicy and tender on the inside with crackling around the outside!
Available in 1kg to 4kg portions for $35 a kilo.
